The old Universal Brick lined oven that I started my baking career with is now being torn down forever. She is just too inefficient and labor intensive to move. She brought us threw many holidays and 4th of July’s. I would now ask for a moment of silence for big Bertha’s demise. 1,2,3,4,5,6,7,8,9 ok that’s enough it’s a frigin oven people……………………… we’ll Miss ya Bertha. Ok, maybe Ronnie won’t miss ya. But you’ll always be my first.

Well, the actuall construction took almost 3 month to the day. The planning for the project took over a year. The years off my life because of the whole project is probablly about 10yrs. Taking that all into concideration WE DID IT!!!!!!!!!!!!!!!
Every one said I was crazy(which is true by the way) Every one said there is no way it can get done in the time frame I needed it done in. Every one said it would cost double what I am planning for. You know what I have to say to every one. I TOLD YOU SO……………………………….. Ok that is a little childish. Yes, that is good old Ronnie Helping Mario (little Italian guy from Italy) build our new deck oven. Than after we built the new oven we had to move the old oven from Brick to Farmingdale. I really need to go see a psychologists, any takers?
So we finally got to our new location in Farmingdale, NJ. It wasn’t easy it wasn’t pretty but we are finally in. We just did a few test bakes last night and we are all ready to go.

That’s good old Ronnie building the walk in Freezer.
YUP!!!! but not for a good reason. That’s rite, your friendly neighborhood baker turned General Contractor was digging a hole to bring in our new 1200 amp electrical service and oh yeah WE HIT THE GAS MAIN to our building. For those of you keeping score that is a 100 PSI 3″ gas main. It sounded like a siren went off. The sand shot about 25 feet in the air form the pressure. I was in the hole and Anthony from Boulder Construction was on the backhoe. You have never seen a 6′ 1″ 300 lb man move as fast as I did out of that hole. The Howell Police and Fire department were there in less than 6 minutes but they had to evacuate a square mile of residence because the good old gas company did not show up for about 45 minutes. Yes folks the 3″ gas main was spooing gas for 45 minutes. Well luckily for me there was no boom in the night. The gas was shut of they fixed the break and both Ronnie and I went back in the hole to finish the job. YOU GOTTA LOVE CONSTRUCTION………………… Oh yeah, Channel 12 showed up to take pictures of the bakery idiots that almost blew up Howell. Sorry about that one Howell 🙂

The septic system is going in. It will be nice not to have to use the big blue out house any more 🙂
Moving right along. The Township of Howell has been very helpfull in moving things right along. Our inspections are going well and soon we will be putting interior doors and trim up soon.
